Eat: Not quite the onion-smothered rabbit I was expecting but this rabbit stew was definitely not a let down. Slow roasted in a Dutch oven with onions, bell peppers, our homemade deer + pork sausage plus some seasonings… goodness over rice that’s what this was.

The homemade deer & pork sausage the boyfriend & I made a couple days ago tasted a lot like Andouille so we threw it into a almost-completely homemade “cajun” pizza. The only thing we didn’t make was the mozzarella cheese & the blackening seasoning. The pizza was spicy, sweet and full of flavor!

Toppings: deer & pork sausage, homemade tomato sauce, shrimp in blackening spices, tomatoes, bell peppers, yellow onions & crushed garlic.


The boyfriend & I went on the wild side and attempted to make our own deer & pork sausage essentially from scratch using my beautiful KitchenAid mixer with attachments. The effort to ground the deer flanks and the pork bellies wasn’t easy but do-able and not a deterrent. The effort to stuff the sausage casing on the other hand was quite a feat, one that we are already researching alternatives for. The sausage stuffing attachment went extremely slow completely unlike all the wonderful videos & TV segments that inspired this lofty adventure and when we helped it along by putting pressure on the meat tube a fair amount of arm strength was required causing quite a bit of elbow & shoulder pain the next day. That all said, the sausage adventures will continue with just a replacement for the KitchenAid’s sausage stuffing attachment. Amazingly, the manual crank versions look to be the better & easier alternative.

The sausage as just a test paddy was heavy with thyme and lacked any gaminess from the deer. After the ground mixture was stuffed into a natural casing and smoked the flavor completely changed. The thyme blended away behind the smokiness of the preservation, spiciness of the cayenne pepper and the gaminess of the deer came out just a little more.

Lightened my load & cut off 13-15 inches to donate to Pantene’s Beautiful Lengths to benefit a woman who was handed a horrible disease & needs some love to feel like a woman again. Note: I’ve done the traditional path of Locks of Love & the less traditional Wigs 4 Kids several times.

Baking with yeast has intimated me for too long. I finally dipped my foot into the water & made my first pizza dough. it was bready without being dry or yeasty & baked up nicely. I’m looking forward to riding this wave of success to baking my first loaf of bread.
